Panna Cotta

I tried making panna cotta today according to this book. Modified it slightly as I couldn't find half and half. I made 10 medium cups (shown in picture below) and 10 small cups (shown in strawberry yoghurt mousse) in total with one recipe. It's rather sweet so if you don't have a sweet tooth, you might want to add less sugar. This type of panna cotta isn't those that you can invert onto a plate and drip chocolate sauce over the plate. It's more of the eat-in-the-cup type of panna cotta. Nonetheless, it still taste good with a rich milky taste =)



Recipe
Ingredients:
3 cups (750ml) whole milk, divided - $1.90/1L (Giant)
2 1/2 tsp gelatin - $1.60/50g (Giant)
1 cup half-and-half (substituted for 100ml whipped cream + 150ml whole milk)
3/4 cup (about 6 flat tbsp) fine sugar - $2.90/2kg (Giant)
1 tsp Vanilla essence - $2 (Giant)
Topping:
Strawberries - $2.95/250g (Giant)
Blueberries - $1.95/150g (Giant)
Shaved chocolate

Method:
1. Pour 1 cup of milk into a small bowl and sprinkle the gelatin on the surface. Let the gelatin soak for 5 minutes. [I did this first and continued with the rest of the steps while waiting.]
2. Combine the remaining milk with the half-and-half and sugar in a medium saucepan. Whisk a couple of times to mix.
3. Add vanilla essence. Place the pan over low heat and bring to a simmer, whisking occasionally. [I whisked it while heating. It will froth a little. Heated it for about 10-15 mins]
4. Add the soaked gelatin into the hot liquid and whisk it in. Let stand for 5 minutes, then whisk again. [I poured it in slowly while whisking with the other hand. There's froth from whisking.]
5. Pout mixture into cups/bowls and refrigerate immediately.
6. After the apnna cotta has set, stretch plastic wrap over the surface of the molds to cover them.

Strawberry Yoghurt Cream

I tried this recipe from my mom's cookbook (Desserts by Winnie in chinese-english) two days ago. It's yummy and very pink =) I doubled the recipe and it made 12 of those small cups (I think they're 5cl) from IKEA and 9 cups with diameter of 1.5~1.75 of that small cups, plus I had excess jelly (probably cos I only lined a thin layer).


Here's the modified recipe for the amount that I've made along with estimated prices of the ingredients. Should be able to make about 30 cups of this size or 10-16 cups of much larger size.

Recipe
Ingredients:
250g Strawberries - $4 (Giant)
300ml Natural yoghurt - $1.80 (Giant) <-- That's 2 packs of Marigold-sized yoghurt
2 tins Nestle dairy cream - $2.30 x 2 (NTUC)
60g Sugar - $1+/1kg (NTUC) <-- You can add more or less according to your liking.
2tbsp Gelatine - $1.60/50g (Giant) <-- I don't recommend to put too much.
60ml Water
Topping:
1 pack strawberry jelly - $0.70 (Giant/NTUC)
250ml hot water
[Total cost: ~ $14]

Method:
1. Beat cream until firm peaks form. Chill and set aside. [If you're using machine, it's about medium-low for 5 mins. When you lift the beater from the cream, peaks will form from the residue. Chill while you make the rest.]
2. Mix gelatine with water in a bowl. Stand bowl in hot water until gelatine has dissolved. [You can either mix the gelatine and water first then stand it in a bowl or do as instructed. Remember to stand bowl in hot water as gelatine tends to clump into this goo-ey (molten) state when left in room temperature]
3. Wash strawberries. Blend half the strawberries into pulp and dice the rest. [You can choose to blend more or less. It is preferably to dice the rest into small pieces so that the dessert will have small chunky bits.]
4. Beat yoghurt with sugar. When sugar dissolves, add strawberry pulp and gelatine solution. [Beat for about 5 mins with machine, add the rest and beat for another 5 mins or so.]
5. Fold whipped cream a little at a time into strawberry mixture. Add diced strawberry. [This is the cream which you've chilled in step 1. Just mix it in.]
6. Spoon strawberry yoghurt cream into prepared dessert glasses. Chill till set. [Best to wait for about 30mins - 1hr before proceeding.]
7. Dissolve strawberry jelly with hot water. Pour onto strawberry yoghurt cream. Chill until set. Decorate and serve. [Suggested decorations include whipped cream and strawberries.]
